Leftover jack-o-lantern got the last laugh? Not anymore!
Reduce your carbon footprint and reuse your leftover pumpkin with these easy recipes–one for Fido and one for you:
For Fido
Jack-o-Lantern Dog Biscuits (courtesy of food.com)
Serving Size: 20 treats
Ingredients:
2 eggs
1/2 cup pumpkin
1/2 teaspoon salt
2 tablespoons dry milk
2 1/2 cups wheat flour
water
Instructions:
- Preheat oven to 350 degrees F.
- Blend eggs and pumpkin together; add salt, dry milk, and flour.
- Add water as needed to make the dough somewhat workable.
- The dough should be dry and stiff, don’t be concerned with crumbs being left in the bowl.
- You will need to mix this with your hands because it is too stiff for an electric mixer.
- Roll to 1/2-inch thick.
- Cut into shapes (dog bones and hydrants are crowd favorites).
- Place 1″ apart on ungreased cookie sheet.
- Bake for 20 minutes on one side, then turn over and bake another 20 minutes.
- “Sit” then enjoy!

Dry Ingredients:
¼ cup roasted pumpkin seeds (pepitas)
¼ cup walnuts, finely chopped
1/4 cup dried cranberries
3 cups quick oats
½ cup whole wheat flour
¾ cup wheat germ
2-3 teaspoon protein powder
½ teaspoon sea salt
1teaspoon each: cinnamon, ginger, allspice, nutmeg
Wet Ingredients:
1 cup honey
1/2 cup pumpkin puree
1/4 cup peanut butter
Instructions:
- Mix together dry ingredients.
- In a separate bowl, mix together wet ingredients.
- Add wet ingredients to dry ingredients and stir.
- Use a melon baller or greased spoon to scoop mixture into balls on cookie sheet.
- Bake at 350 degrees for 12 minutes.
- Cool on rack and store in fridge.
- Take these delicious treats on a fall hike.
